All that is keeping me busy, and unfortunately keeping me away from the blog. I have started writing for the Stavanger Expats website - a great resource for expats seeking to move to or living in Stavanger and am also in the midst of starting and organizing a book, movie and wine club. I might just see the light at the end of the tunnel soon. Thankfully, I am getting my groove back and getting more work done every day. It is amazing how the mere act of moving can have such a negative impact on one's productivity. Sunshine has been working very hard, and I am back to being productive - writing and doing research. Things have been busy here at the Sunshine household. And it was so windy - I could barely see anything because the rain kept hitting me on the face. ![]() We went out for a walk to a lake a few miles away from home early on Sunday morning and had to promptly turn back because it started raining ice! We had a lazy weekend mostly, waiting for the weather to get better - it has been raining, snowing, sunny, raining iced rain the whole weekend long. ![]() Spoon this over the soup in the bowls and gently swirl.Ĭredits: Pugly Pixel for the honeycomb pattern and the tape. In a separate bowl, mix a tablespoon of the the soup with a tablespoon of sour cream. Add lemon juice and lemon zest and mix. Finally add red pepper flakes, salt and pepper. Pour the soup back in to the pan, and put the pan on low heat. Ladle the cooled broth and veggies in to a blender. Remove the pan from the heat, and let cool. Bring to a boil, cover and let the vegetables simmer till they have cooked thoroughly. When the onions turn translucent, add the vegetables and fry them for a minute.Īdd broth and bay leaf. Just make sure they are chopped evenly so that they can cook evenly. You don't have to worry about finely chopping the onions because you will be blending the soup at the end. Let heat, and then add chopped onions, and garlic. Heat a heavy bottomed pan - I use a dutch oven - and add oilve oil.
